Loaded Wedge Salad


  • 2 small tomatoes (about 8 ounces total), diced 

  • Salt and pepper 

  • 1 small red onion, minced 

  • 4 ounces sliced bacon, cut into 1/2 inch pieces 

  • 2 ounces mild blue cheese, Gorgonzola or feta 

  • Your favorite dressing (Ranch, blue cheese or creamy dill) 

  • 1 head iceberg lettuce, outer leaves discarded and quartered through the core so that each quarter holds together 

  • Minced chives, for garnish 


Arrange iceberg wedges on plates and spoon dressing on each. Sprinkle all other ingredients on the wedge or serve everything on the side.
