1 lb breakfast sausage (I use pork but turkey or chicken will be just as good)
1 dozen eggs
1 Tbsp milk
2-3 oz cheese (any kind you like) pepper jack, cheddar, swiss, feta, mozzarella etc
Vegetables (optional) I used pico de gallo or broccoli
Start by preheating your oven to 450 degrees. Spray the muffin tin evenly with cooking spray. Divide the sausage and place into the bottom of the muffin tin, try to distribute evenly. Bake the sausage for about 10 minutes, or until cooked.
Crack 1 dozen eggs in a mixing bowl. Add salt and pepper to taste.
Add milk and beat the eggs until they are fluffy.
Add cheese and vegetables to taste and gently mix into egg mixture to keep the eggs fluffy.
When the sausage is fully cooked, remove it from the oven and let cool 3-4 minutes and turn the oven down to 350 degrees.
Next, using a ¼ cup measuring cup, pour the egg mixture over the sausage until all the egg mixture is used and the tins are full.
Sprinkle more cheese on top of the egg and sausage.
Bake egg for about 15 minutes when fully cooked serve hot or let cool then place in an airtight container for later.
