Low carb recipe for this holiday season. Creamy eggnog is a tasty and quick recipe for you and your guests. Brandy is optional and can be added to individual cups. Please drink responsibly.
250 ml Almond milk, unsweetened
2 Eggs, medium
1 tsp Cinnamon
1/2 tsp Nutmeg, ground
2 tbsp Sweetener, granulated we like (Swerve - erythritol)
1 tsp Vanilla
2 tbsp Butter
250 ml Heavy cream
Beer, Wine & Liquor
2 tbsp Brandy
Place all the ingredients (apart from the brandy) in a saucepan and mix gently whilst heating.
Cook for 3-5 minutes on a gentle heat. Do not allow to boil. The mixture will slowly thicken as the eggs gently cook.
Remove from the heat, stir in the brandy, pour into glasses, garnish with whipped cream and a sprinkle of nutmeg.
