Faux Cauliflower Rice


  • 1 large cauliflower. Finely chopped or use a food processor. 

  • Butter or olive oil 

  • Seasonings/herbs garlic, parsley, cilantro, lime  

  • Salt and pepper 


  1. Start with one large cauliflower. Pull off the leaves and break the cauliflower into large florets, then rinse them well.

  2. Leave them in a colander to let all the moisture drain off or pat them dry with a paper towel.

  3. You can grate your cauliflower florets or you can process them in a food processor. Either way the cauliflower needs to be finely chopped.

  4. Sauté in a skillet with olive oil, add garlic, parsley, cilantro or basil, lemon or lime and salt and pepper to taste.
