Makes 4 servings
1 large head of cauliflower
2 tbsp butter
2 tbsp heavy cream
2 oz. cream cheese
1.5 cups cheddar cheese
4 slices of cooked bacon
1/4 cup chopped green onions
Preheat oven to 350F (175 C)
Add one inch of water to the bottom of a microwave safe container or large pan. Steam cauliflower in microwave or in a pan over medium high heat until very soft. Drain all liquid.
In a blender or food processor add the steamed cauliflower, butter, cream and cream cheese. Blend until smooth like mashed potatoes.
Add cauliflower mixture to an oven-safe dish and top with cheddar cheese and cooked bacon. Bake for 5-10 minus or until cheese is melted and cauliflower mash is hot.
Top with chopped green onions. Enjoy!
