Loaded Cauliflower Mash

Makes 4 servings


  • 1 large head of cauliflower

  • 2 tbsp butter

  • 2 tbsp heavy cream

  • 2 oz. cream cheese

  • 1.5 cups cheddar cheese

  • 4 slices of cooked bacon

  • 1/4 cup chopped green onions


  1. Preheat oven to 350F (175 C)

  2. Add one inch of water to the bottom of a microwave safe container or large pan. Steam cauliflower in microwave or in a pan over medium high heat until very soft. Drain all liquid.

  3. In a blender or food processor add the steamed cauliflower, butter, cream and cream cheese. Blend until smooth like mashed potatoes.

  4. Add cauliflower mixture to an oven-safe dish and top with cheddar cheese and cooked bacon. Bake for 5-10 minus or until cheese is melted and cauliflower mash is hot.

  5. Top with chopped green onions. Enjoy!
